Cutout Crumble Cookies

This is a cutout cookie recipe that I learned from my mom when I was a little girl. These are “European style” meaning they are subtly sweet and go great with a cup of tea or coffee. I have changed the recipe to use gluten-free flour which tends to make the cookies crumble a bit more than they would otherwise, which is why I call them my cutout crumble cookies.

Prep time: About 20 – 30 minutes 

Cook time:  About 15 – 20 minutes 

Number of Cookies: About 18 – 20

This meal is gluten-free and soy-free.

 

Ingredients

 

  • 300 grams or 2 2/3 sticks of unsalted butter; melted
  • 1 cup of sugar (I prefer to substitute 8 packets of Stevia)
  • 2 1/2 cups of flour (I prefer Bob’s Red Mill Gluten Free 1 to 1 Baking Flour)
  • 2 eggs

Optional, but recommended…

  • 1 – 3 types of your favorite jam or jelly

 

Kitchen Utensils You Will Need

 

Following are the kitchen utensils that you will need to prepare this Plov recipe.

  • A medium to large size bowl for mixing.
  • A small pot of bowl for melting butter.
  • A rolling pin.
  • One or two measuring cups.
  • One or more cookie cutters.
  • One or two cookie sheets.
  • Parchment paper.
  • A spatula.
  • A large mixing spoon.
  • A large area for rolling out dough.

 


These are some of my favorite kitchen utensils that I use for this recipe.

Stainless Steel Mixing Bowls Set (Set of 6) – I love these bowls! They are lightweight, durable, and multi-purpose. Great for mixing, serving, and even melting butter on the stovetop!

Silicone Cooking Utensils Set – While I love the old-fashioned wooden spoon, I switched over to silicone a few years ago. They are easier to clean and care for. They are also non-toxic which is always a plus!


 

How to Make It

 

Start by Making the Dough

 

Preheat the oven to 380 F.

Heat all the butter so that it is melted.

As the butter is melting, start mixing all the ingredients for the dough. First, pour all the flour into a mixing bowl. Then, add the two eggs. Next, add the Stevia (or sugar). And finally, when it is ready, add the melted butter.

Using a spoon, thoroughly mix all the ingredients until the dough is of an even consistency.

 

Rolling out the Dough

 

To roll out the dough, you will need a large working area. A clean table or a countertop will do nicely.

Since the dough tends to stick to everything, add a layer of flour on your rolling surface and to your rolling pin. Roll out the dough until it is approximately 1/4 inch (5-7 mm) thick.

 

 

This is the fun part. If they haven’t been helping already, this is a good place for children to jump in and start helping.  I enjoy the flower-shaped cookie cutter which you will see in the rest of this recipe, however, my children like to pick Christmas tree, candy cane, and snowman-shaped cookie cutters for the Christmas season, heart-shaped cookie cutters for Valentine’s Day, etc.

Using the cookie cutter(s) that you chose, cut out as many cookies as you can from the rolled-out dough.

Now comes the flipping maneuver. After picking up the cutout cookie with the spatula, flip it over into the palm of your hand. Carry it over to the baking sheet and then flip it over again so that it lands right-side up on the baking sheet. Have your baking sheets ready to go before this step. I like to cover my baking sheets with parchment paper as it helps prevent the cookies from sticking and makes cleanup so much easier.

Once you can’t cut out any more cookies, combine the remaining dough and roll it out again. Cut out as many cookies as you can. Then combine, roll, cut out, and repeat as many times as needed until all the dough is used up.

 

Finishing Touches

 

The cookies are now ready to be put in the oven to bake. You can keep them plain or top them with a teaspoon of jelly or jam. I like to top them with strawberry or raspberry jam.

With the oven preheated to 380oF, bake the cookies for 15 minutes (if thinner) to 20 minutes (if thicker). They should be a nice golden color when done.

Your cutout crumble cookies are now ready to eat! Grab a cup of your favorite coffee or tea and enjoy these tasty treats!

 

Other Delectable Possibilities

 

Instead of topping the cutout crumble cookies with jelly or jam, try some of these other tasty ideas to tantalize your taste buds!

  • After taking your plain cookies out of the oven, drizzle some honey over them! Great for afternoon tea.
  • After taking the plain cookies out of the oven and letting them cool, top with a thin layer of your favorite frosting. Get your kids even more excited by adding sprinkles on top of the frosting!
  • Get several of your favorite chocolate bars. Break or cut them into small pieces. Before putting your cookies in the oven, cover them with the small pieces from the chocolate bars. As the cookies cook in the oven, the chocolate pieces will melt and cover the cookies. Delicious!
